The stall

From petroleum to kopi

Lawrence Tan brokered petroleum until 2016. Early the next year he took unit #B1-49 in the basement of Golden Mile Food Centre and opened Kopi More.

The stall runs on one man. Orders are ground fresh and pulled two cups at a time, which is why the queue moves the way it does.

The craft

An espresso machine, not a coffee sock

Nanyang kopi is usually brewed through a cloth sock. Here it goes through a calibrated espresso machine. The blend — Indonesian Robusta and Colombian Arabica, roasted with sugar and margarine — comes out with a chestnut crema.

The same blend is sold by the bag, to brew at home.
